just what el doctor ordered

I am in urgent, urgent need of a decent, cheap, non-chain Mexican food joint here in Detroit. Until that need is filled, I plan to make these nachos every day for lunch.

Chipotle Nachos

This serves one but is infinitely scalable.

1 cup cooked pinto beans
1/2 of a chipotle chile (from a can, the kind "canned in adobo sauce")
3 T grated cheese (any kind will do--maybe not romano or whatever)

1/2 of one tomato, diced
splash of balsamic vinegar

Microwave the first 3 ingredients. Stir in the last 2 ingredients. Eat with chips. Think about sunny places where food like this is widely available.

This sounds delicious. And easy, which is an added bonus. Plus, it gives me another use for the half-used can of chipotle peppers I have in my fridge. Thanks for sharing.

The two Mexican restaurants in town (well, we have three if you include Taco Bell, which most residents do) are really crummy here. So, any good Mexican recipes are always welcome.

Sounds yummy. If you ever come visit us again, there is a yummy Mexican place that has become our new favorite and that we must take you to.

Ok, you might want to give out your blog to some more people who live around these parts. I've never eaten there, but is the place on Long Lake just past Rochester a chain? I've always wanted to stop in.
